Bbb's Rhubarb Coffee Cake Recipe

• 2 c. Sugar
• 1 c. Shortening
• 2 x Large eggs
• 2 tsp Cinnamon
• 2 tsp Baking pwdr
• 1/4 tsp Salt
• 1 c. Cool coffee
• 3 c. Flour
• 3 c. Finely minced, peeled rhubarb

1. Cream together sugar and shortening, add in the Large eggs.
2. Add in the next 3 ingredients.
3. Add in coffee and flour alternately.
4. Add in rhubarb.
5. Pour into a greased 9 x 13 pan.
6. Sprinkle with cinnamon, sugar (add in nuts if you want).
7. Bake at 350 degrees for 45 min.
8. Makes a moist coffee cake.
