Bocconcini with Grilled Chicken
- 1 lb. boneless skinless chicken breast Whole Foods 1 lb For $3.99 thru 02/09
- 1/2 cup each: sliced button and shiitake mushrooms
- 2 cloves garlic, minced
- 1 Tbsp. oil
- 1/2 cup oil-packed sundried tomatoes, drained and thinly sliced
- 2 green onions, chopped
- 4 cups bocconcini pasta
- 1 Tbsp. parsley
- 2 Tbsp. sundried tomato oil
- Grill chicken, let stand 10 minutes, then cut into slices and set aside.
- Cook mushrooms and garlic in oil in a large frypan for 5 minutes or until golden brown.
- Stir in sliced chicken, sundried tomatoes and green onion.
- Cook pasta according to package directions.
- Drain and toss with chicken mixture.
- Top with parsley and sundried tomato oil.
- Serve immediately.
