Bruschetta with Seasonal Summer Vegetables
- 1 small French bread baguette, cut into about 12 one inch slices
- 1/2 cup diced tomato King Sooper's 1 lb For $0.99 thru 02/09
- 1/2 cup diced eggplant Safeway 1 ea For $1.28 thru 02/09
- 1/4 cup chopped black olives
- 2 Tbsp. fresh basil
- 1 cup KRAFT Shredded Mozzarella Cheese
- 1 Tbsp. olive oil
- season to taste
- Toast slices of bread
- While bread is toasting, mix diced tomato, eggplant, olives and basil together in a small bowl and add in olive oil.
- Stir, and season to taste.
- Top toasted bread with vegetable mix and cheese.
- Serve and enjoy!
