Bruschetta with Seasonal Summer Vegetables

  1. Toast slices of bread
  2. While bread is toasting, mix diced tomato, eggplant, olives and basil together in a small bowl and add in olive oil.
  3. Stir, and season to taste.
  4. Top toasted bread with vegetable mix and cheese.
  5. Serve and enjoy!
