Upside Down Ham Loaf
- 2 tablespoons butter
- 14 cup molasses
- 8 -12 pineapple chunks
- whole cloves
- 4 cups cooked ham, ground
- 1 cup breadcrumbs
- 2 tablespoons onions, grated
- 12 teaspoon dry mustard
- 2 eggs, slightly beaten
- 1 dash cayenne pepper
- 12 cup pineapple juice
- Melt butter in bottom of greased loaf pan or casserole; cover with molasses.
- Stud pineapple wedges or cubes with whole cloves and arrange in molasses.
- Combine ham and remaining ingredients, pack into pan or casserole on top of pineapple.
- Bake covered in moderate oven (350F) for 30 minutes.
- Turn upside down on hot platter.
