Indian Gravy

  1. Heat ghee and saute onions and garlic until golden.
  2. Stir in ginger, turmeric, cayenne and garam masala in turn.
  3. Stir fry for 5 minutes.
  4. Add tomatoes and yogurt.
  5. Stir in salt and cook for 2 minutes.
  6. Pour in water and bring to a boil.
  7. Reduce heat and simmer for 10 minutes.
  8. The gravy is now ready to use.
  9. Makes 2 1/2 cups.
