Brazilian Coconut Beijinhos
- 14 oz sweetened condensed milk
- 1 tbsp butter (more for greasing pan and hands)
- 1 cup sweetened flaked coconut (more for decoration)
- 1 granulated sugar for decoration
- 1 Mini cupcake liners
- First, simmer the butter in a saucepan, and then add in the condensed milk over medium heat.
- Continue to simmer the mixture with a silicone spatula.
- Once the mixture gets thick, be careful not to burn it.
- Turn off the heat and incorporate 1/2 cup of coconut flakes into mixture.
- Mix thoroughly.
- Allow mixture to cool in room temperature for a few minutes.
- (mixture will set once refrigerated).
- Butter a pan or a plate so the mixture will not stick when you pour it.
- Once you pour mixture into buttered plate, then refrigerate for at least 2 hours for it to cool down and to be able to roll them into balls.
- Butter your hands generously with butter so it will be easier to roll, use a buttered spoon or your hands to form a small ball.
- Toss and roll the ball into your choice of coconut flakes, granulated sugar, or powdered sugar.
- (Optional) Stick a clove in the middle of each ball to add extra flavor and for decoration.
- However, do not consume the clove when serving.
- Place your "coconut kiss"in the mini cupcake liners.
- Keep refrigerated.
