Tartiflette
- 800 g potatoes, peeled
- 300 g soft French cheese, such as Camembert, diced
- 1 onion
- 2 tablespoons low-fat creme fraiche
- 200 g lardons (diced bacon) or 200 g smoked sausage
- 100 ml dry white wine
- 15 g butter
- salt & freshly ground black pepper
- Heat the oven to 200 degrees C (400 degrees F).
- Boil the peeled potatoes in lightly salted water.
- When finished, drain and cut in thick slices.
- Sweat the minced onions until soft.
- Slightly cook the bacon as well.
- Cover the bottom of a buttered gratin dish with slices of potatoes.
- Season with black pepper then with the onions and bacon and one thrid of the cheese.
- Repeat with the potatoes, onions and bacon, then top with the potatoes, creme fraiche and remaining cheese.
- Pour the wine over.
- Put in the oven and bake for about 30 minutes until the cheese is melted and golden.
