Better-for-You Potato Salad

  1. Cook potatoes in boiling water 15 min.
  2. or just until tender; drain.
  3. Cool completely.
  4. Mix mayo and basil in large bowl until blended.
  5. Add potatoes, eggs, carrots and peppers; mix lightly.
  6. Refrigerate 1 hour.
