Baked BBQ Sweet and Sour Chicken (Freezer Meal)
- 3 Boneless, Skinless Chicken Breasts
- 2 Tablespoons Magic Dust Or Cajun Seasoning
- 2 Medium Bell Peppers, Seeded And Chopped Into 1 Inch Pieces
- 1 Medium Onion, Chopped Into 1 Inch Pieces
- 1- 1/2 cup Fresh Pineapple Cubes (fresh Is Best But I Have Used Canned As Well)
- 1/2 cups Your Favorite Honey Bbq Sauce (I Always Use Sweet Baby Rays)
- Hot Cooked Rice, For Serving
- If freezing: Place all of the ingredients except the rice in a freezer-safe zip-lock bag.
- Seal the bag and shake to coat.
- Freeze until ready to use.
- Pour the frozen ingredients into a greased 13x9 baking dish.
- Preheat your oven to 350 F. Put dish into the heated oven and bake for about 45 minutes to an hour.
- If making fresh: Preheat your oven to 350 F. Spray a 13x9 inch baking dish with cooking spray.
- In a large bowl add the chicken and sprinkle with the magic dust.
- Toss to coat.
- Place chicken and all the remaining ingredients (except rice and BBQ sauce) in the prepared 13x9 inch baking dish.
- Drizzle with the BBQ sauce and bake for 30 minutes stirring about halfway through.
- Serve over hot cooked rice.
