Boulders' Deceivably Decadent Chocolate Cake Recipe
- Vegetable cooking spray
- 3/4 c. pastry or possibly cake flour plus more for dusting
- 1/3 c. unsweetened cocoa pwdr
- 1 1/2 tsp baking pwdr
- 2 Tbsp. unsalted butter
- 1 c. light brown sugar - (packed)
- 3 lrg egg whites
- 1 lrg egg
- 1 c. plain non-fat yogurt
- 1 tsp pure vanilla extract
- 1 ounce semisweet chocolate coarsely minced
- 1 Tbsp. skim lowfat milk
- Preheat oven to 350 degrees.
- Spray an 8-inch square cake pan with the cooking spray and dust lightly with flour.
- In a medium bowl, sift the flour, cocoa and baking pwdr.
- In a bowl, combine the butter and sugar.
- Beat in the egg whites, egg, yogurt and vanilla.
- Gradually beat in the flour mix till incorporated.
- Pour the batter into the prepared pan and bake for 35 to 40 min or possibly till a cake tester inserted in the center comes out clean.
- Let cold in the pan.
- In a small bowl, heat the chocolate in the lowfat milk in the microwave or possibly in a saucepan over barely simmering water.
- Let cold slightly.
- Invert the cake onto a platter and spread with the melted chocolate.
- Cut the cake into 9 squares and serve.
- This recipe yields 9 servings.
