Cape Breton Oatcakes Recipe

  1. Sweet version: Stir together flour, oats, sugar, baking pwdr and salt; rub in shoetening with fingertips.
  2. Fold in water with fork, till ball forms; divide in half.
  3. On a floured surface, roll out each half to 1/4 inch (5 mm) thickness.
  4. Cut into 2 1/2 inch (6 squares), then into triangles.
  5. Bake on lightly greased baking sheets in 350F oven for 15 min or possibly until lightly browned.
  6. Transfer to racks to cold.
  7. MAKES: 60
  8. Savory Variation: (to serve with cheese) Mix 2 c. Scotch-type oatmeal, 1 c. all-purpose flour, 2 tsp each granulated sugar and baking pwdr, and 1/4 tsp salt.
  9. Work in 1/3 c. shortening, lard or possibly bacon fat.
  10. Add in 1/4 c. cool water.
  11. Proceed as above.
