Lemon Pasta
- 1 (16 ounce) box pasta (whatever shape is fine)
- 1 lemon, zest of
- 2 garlic cloves (finely minced)
- 1 pint heavy cream
- 12 cup of grated parmesan cheese
- 1 cup spinach (greens of choice) or 1 cup red leaf lettuce (greens of choice)
- 1 tablespoon olive oil
- 1 teaspoon flour
- 1 large tomatoes (diced)
- 1 tablespoon coarse salt
- First get the noodles cooked acording to the directions on the box.
- While the noodles are cooking, get a saucpan going on about medium heat.
- Add the olive oil.
- Add the teaspoons of flour and wisk into the olive oil.
- Mince the garlic and add to the flour/olive oil mixture.
- Add the heavy cream.
- Wisk together.
- Zest the whole lemon into the heavy cream.
- Wisk.
- Keep wisking and add the paramsan cheese and salt.
- Once all of the cream, lemon, garlic, and cheese are incorperated and getting thickened turn the heat off.
- Then chop the tomato into chunks and chop the greans into bite size pieces.
- Drain the noodles and pour into a serving bowl/dish.
- Add the sauce, tomato, and greens.
- Stir.
- Add the salt at the very end.
- Viola!
- Enjoy!
