Asian Pork Cakes With Rice Noodles
- 756 g sausages
- 2 teaspoons ginger
- 2 spring onions
- 1 lime
- handful coriander
- 750 g noodles
- 4 tablespoons fish sauce
- 2 teaspoons sugar
- 12 cucumber
- chili sauce
- Preheat the oven to gas 6, 200C, fan 180C Use a sharp knife to cut open each sausage and squeeze out the sausage meat.
- Mix with the ginger, spring onion, zest, and most of the chopped fresh coriander.
- Wet your hands and then shape the mixture into small patties, about 3cm (1 1/2 in) wide, and put on a lightly greased baking tray.
- Bake for 15-20 minutes until browned and cooked through.
- Meanwhile, prepare the noodles following the pack instructions.
- Cool under the cold tap and then drain.
- Mix the lime juice with the fish sauce and sugar until the sugar dissolves.
- Toss the dressing with the noodles.
- Stir in the cucumber.
- Serve the cakes with the noodles and some sweet chilli sauce.
