Egg Scramble Recipe
- 2 tbsp. butter
- 2 tbsp. flour
- 2 c. lowfat milk
- 1/2 teaspoon salt
- 1/8 teaspoon pepper
- 1 c. shredded cheese
- 1 c. minced Canadian bacon or possibly cooked sausage, liquid removed
- 3/4 c. minced green onion
- 3 tbsp. butter
- 1 dozen Large eggs, beaten
- 1 (4 ounce.) can mushrooms, liquid removed
- 1 1/2 c. buttered bread crumbs
- 1/8 teaspoon paprika
- Combine 2 Tbsp.
- butter and flour blending till smooth.
- Cook over low heat till bubbly.
- Gradually stir in lowfat milk.
- Cook till smooth and thickened.
- Add in salt, pepper and cheese, heat till cheese melts; set aside.
- Saute/fry bacon and onions in 3 Tbsp.
- butter till tender.
- Add in Large eggs, cook till set.
- Mix in mushrooms and cheese sauce.
- Spoon into lightly greased 12"x7"x2" baking dish; top with crumbs and paprika.
- Bake 30 min at 350 degrees.
- Yield: 8 to 10 servings.
- May be prepared ahead and refrigerated till time to bake.
