Balsamic Figs with Beef Fillet
- 4 beef fillet steaks Whole Foods 1 lb For $7.99 thru 02/09
- 1/3 cup KRAFT Balsamic Italian Dressing
- 1 tablespoon olive oil
- 1/2 onion, finely sliced King Sooper's 1 lb For $0.99 thru 02/09
- 8 dried figs, halved
- 1/2 cup beef stock Whole Foods 1 lb For $7.99 thru 02/09
- 1/3 cup KRAFT Balsamic Italian Dressing, extra
- 1 tablespoon brown sugar
- Mashed potato, to serve Safeway 2 pkg For $5.00 thru 02/09
- Steamed or roasted vegetables, to serve Target 2 lb For $3.00 thru 02/06
- Marinate steaks in dressing for at least 1 hour.
- Heat oil in a frypan over a medium high heat.
- Cook steaks to your liking, remove from pan, cover and keep warm.
- Add onion and figs to the pan and cook for 5 minutes until softened.
- Add stock, extra dressing and sugar.
- Bring to the boil then simmer 5-10 minutes until figs have softened and liquid has reduced by half.
- Serve steaks with mashed potatoes and vegetables.
- Top steaks with balsamic fig sauce.
