Tuna Brocolli Pasta

  1. Parboil the brocolli in salted water.
  2. Heat the olive oil in a pan and add the onions.
  3. Fry until soft.
  4. Mince the garlic and add to the pan.
  5. Fry until soft.
  6. Add the red wine vinegar to the pan and combine with the onions and garlic.
  7. Drain the parboiled brocolli and add to the onions and garlic.
  8. Fry for 3 to 5 minutes.
  9. Add the can of chopped tomatoes and the tomato paste to the pan and combine with the vegetables.
  10. Salt to taste.
  11. Bring to the boil and add the basil and oregano.
  12. Stir together and simmer whole you cook the pasta.
  13. Add pasta to a pan with boiling water.
  14. Make sure you salt the water well.
  15. Simmer the pasta until its cooked as you like.
  16. I prefer al dente, bit it really doesn't matter.
  17. Optional: if you have kids, use a stick blender to blend up the brocolli.
  18. You may need to add some liquid as this will thicken it a lot.
  19. Add the can of tuna flakes and mix with the sauce.
  20. Drain your pasta and add to serving bowl.
  21. Ladle the sauce over the pasta and add a cheese to taste.
