Mike's Egg-cellent Egg Salad
- 10 large Eggs use older eggs - use 8 - 2 meant for garnish
- 2 tbsp Chives chopped
- 1 large 1/2 Claussens Pickle Spear or 2 medium - diced
- 1/8 tsp Garlic Powder
- 1 tsp Yellow Mustard
- 1 tsp Dried Parsley
- 1/4 cup Celery minced
- 1/3 cup Mayonnaise
- 2 large Sliced Eggs
- Bring eggs to boil.
- Turn off heat.
- Leave eggs to sit in pot for 18 minutes covered.
- Rinse in cold water immediately to stop cooking process.
- Chop vegetables.
- Peel eggs and dry them.
- Then, mash them.
- Add veggies, mayonnaise, mustard, garlic powder and salt and pepper to taste.
- Mix well.
- Chill in fridge for an hour covered.
- Spread on fresh bread or bagels of your choosing.
- Garnish with lettuce, sliced eggs and paprika if desired.
