Traditional Mandarin Fried Rice

  1. In a wok, add 2 tablespoons of oil and quickly soft-scramble the eggs.
  2. Remove the eggs.
  3. In the same wok, coat with oil and stir-fry garlic and ginger.
  4. Add white scallions and lapchang.
  5. Add rice and mix thoroughly.
  6. Add soy sauce, white pepper and scrambled eggs.
  7. Check for seasoning.
  8. Serve immediately.
