Pasta Brie & Fresh Tomatoes

  1. Combine everything (except pasta, 1 tablespoon olive oil and Parmesan cheese) at least 2 1/2 hours ahead of time.
  2. At mealtime cook pasta in water and the remaining 1 tablespoons olive oil according to package instructions.
  3. Drain pasta when done.
  4. Mix with the tomato/brie mixture.
  5. (The brie should melt).
  6. Sprinkle with fresh parmesan before serving.
