Cabbage Soup
- 1 tablespoon extra virgin olive oil
- 2 garlic cloves, minced
- 12 cup yellow onion, chopped
- 12 cup fresh carrot, chopped
- 12 cup celery, chopped
- 3 cups fat free low-sodium beef broth
- 0.5 (6 ounce) can tomato paste
- 2 cups shredded white cabbage
- 12 cup fresh green beans, chopped
- 12 teaspoon oregano
- 12 cup frozen corn, thawed
- 14 teaspoon salt
- 18 teaspoon black pepper
- Saute garlic, onion, carrots and celery in olive on med-low heat until carrots and celery are soft.
- Be careful to not burn the garlic.
- Add broth, tomato paste, cabbage, beans, and oregano.
- Simmer for 5-10 minutes.
- Add corn.
- Bring back to a low simmer for 5-10 minutes.
- Add salt and pepper, simmer for 5-10 minutes.
- Enjoy!
