Cabbage Soup

  1. Saute garlic, onion, carrots and celery in olive on med-low heat until carrots and celery are soft.
  2. Be careful to not burn the garlic.
  3. Add broth, tomato paste, cabbage, beans, and oregano.
  4. Simmer for 5-10 minutes.
  5. Add corn.
  6. Bring back to a low simmer for 5-10 minutes.
  7. Add salt and pepper, simmer for 5-10 minutes.
  8. Enjoy!
