Potato, Broccoli, Cheese Soup Recipe
- 10 potatoes, scrubbed & cut into cubes (leave skin on)
- 1 med. onion, minced
- Head of broccoli, minced (including stems, peel outer edge near bottom)
- 3 tbsp. fresh parsley, minced fine
- Salt & pepper to taste
- 3/4 c. lowfat milk
- 2 c. shredded cheddar cheese
- Place potatoes, onion and broccoli in large pan.
- Fill with water until vegetables are just barely covered.
- Cook on medium heat about 45 min until potatoes are tender.
- Remove from heat and mash vegetables and liquid with potato masher.
- Add in lowfat milk, parsley, salt and pepper.
- Add in cheese and simmer until cheese melts.
