Peach Chutney

  1. Heat oil in a small saucepan over medium.
  2. Add onion and cook, stirring occasionally, until soft, about 5 minutes.
  3. Add garlic and red-pepper flakes to taste; cook 1 minute.
  4. Stir in vinegar, sugar, and dried cherries; season with salt and pepper.
  5. Bring to a boil; reduce heat, and simmer until syrupy, about 5 minutes.
  6. Add peaches; simmer until soft, 5 to 10 minutes.
  7. With a wooden spoon, mash some peaches against side of pan; thin with the water, if needed.
  8. Let cool completely.
  9. Per Serving (1 Tablespoon)
