Blackberry Muffins
- 2 cups wheat flour
- 34 cup white flour
- 1 tablespoon baking powder
- 12 teaspoon salt
- 2 eggs
- 1 cup milk (I think I used soy)
- 12 cup oil
- 12 cup honey
- 12 teaspoon vanilla extract
- 1 12 cups blackberries
- Preheat oven to 400.
- Mix dry ingredients together in a bowl.
- In a separate bowl, combine eggs, milk, oil, honey and vanilla.
- Beat well.
- Add dry ingredients and stir.
- Add the blackberries.
- Stir just enough to moisten.
- Fill buttered or lined muffin tins 2/3 full.
- Bake 20 minute.
