Apple Stuffed Chicken Breasts Recipe
- 4 x boneless chicken breasts
- 3 slc bacon minced
- 2 x cloves garlic chopped
- 3 x scallions finely minced
- 1 x apple peeled and minced Pepper to taste Salt to taste
- 1/2 tsp thyme
- 1/3 c. Parmesan cheese
- 2 tsp extra virgin olive oil
- Cut a small pocket into the thickest part of each chicken breast and set aside.
- Fry bacon till crisp.
- Drain on a paper towel.
- Add in garlic and scallions to the bacon drippings; saute/fry slightly.
- Add in apple, pepper, salt and thyme and return the bacon bits to pan.
- Heat thoroughly.
- Remove from heat and cold.
- When mix is cold, add in cheese and stuff into chicken breast.
- Brown chicken on both sides in a very warm fry pan with extra virgin olive oil.
- When brown on both sides, place in a baking dish and bake at 350 F for 15 to 20 min or possibly till chicken is done.
