Sausage-Stuffed Cornish Hens

  1. Preheat oven to 350F.
  2. Brown sausage with mushrooms in large skillet; drain.
  3. Return to skillet.
  4. Add stuffing mix, carrots and hot water; stir just until moistened.
  5. Set aside.
  6. Spoon stuffing mixture evenly into hen cavities; close openings with skewers.
  7. Place hens, breast sides up, in shallow roasting pan.
  8. Brush with oil.
  9. Bake 1 hour; spoon jelly over hens.
  10. Bake an additional 10 min.
  11. or until hens are cooked through (180F).
