Quinoa With Peas and Cashews

  2. Cook quinoa with vegetable broth in a small saucepan by bringing to a boil then simmering until all the liquid is absorbed-about 15 minutes.
  3. It will have cute little tails.

  5. If you're a multi-tasker, while quinoa is cooking, heat butter, add onions and tarragon and saute a few minutes until onions are translucent.

  7. Add in cashews and peas and turn off heat.
  8. 4.
  9. Mix butter mixture with quinoa and serve.
