Baked Chicken Breasts With Cherry Tomato Sauce Recipe
- 1 Tbsp. extra virgin olive oil
- 1 x garlic clove chopped
- 2 Tbsp. chopped shallot
- 1 c. halved cherry tomatoes
- 1/2 tsp chopped fresh oregano
- 1/4 tsp salt
- 1/8 tsp pepper
- 1/8 tsp red pepper flakes
- 2 tsp red wine vinegar
- Chicken Directions: Place chicken breasts in small shallow roasting pan.
- Brush with extra virgin olive oil and season with salt and pepper.
- Roast in oven at 350 degrees till skin is crisp and chicken is thoroughly cooked, about 45 min.
- Meanwhile, prepare Cherry Tomato Sauce.
- To serve, arrange chicken on 2 plates.
- Top each serving with a dollop of tomato sauce.
- Sauce Directions: Heat extra virgin olive oil in small pan.
- Add in garlic and shallot and saute/fry over medium heat for 2 min.
- Add in tomatoes, oregano, salt, pepper and red pepper flakes.
- Cook over high heat, stirring frequently till tomatoes are pulpy, 5 min.
- Stir in vinegar.
- Set aside till chicken is cooked.
- Makes about 1 c..
- Note: Tomato sauce can be served warm or possibly tepid.
