Baked Ricotta
- 500 g fresh ricotta, fat reduced
- 2 teaspoons dried oregano
- 12 teaspoon dried chili pepper flakes
- 2 -3 teaspoons olive oil
- Heat oven to 180C.
- Grease base and sides of 19 x 9 cms loaf pan.
- Line with baking paper.
- Combine first 3 ingredients in a bowl, season with salt and pepper.
- Press mixture into prepared pan, smooth surface.
- Drizzle with olive oil.
- bake 50 minutes till set and lightly browned.
- cool in pan, chill overnight.
- Serve with crackers and sweet chili sauce.
