Pig Cake
- 18 ounces yellow cake mix
- 4 eggs
- 12 cup margarine, softened
- 11 ounces mandarin oranges
- 1 teaspoon vanilla extract
- 1 (20 ounce) can crushed pineapple
- 3 12 ounces vanilla instant pudding mix
- 12 cup confectioners' sugar
- 4 ounces whipped topping
- Combine cake mix, eggs, margarine, mandarin oranges and vanilla in mixer bowl.
- Beat for 4 minutes.
- Pour into greased and floured 9x13-inch pan.
- Bake at 350 for 25 to 30 min or until cake tests done.
- Drain pineaple, reserving juice.
- Blend reserved juice and pudding mix in bowl.
- Mix in confectioners' sugar.
- Stir in pineapple.
- Fold in whipped topping.
- Spread over cooled cake.
- Chill in refrigerator.
