Berry And Mousse Parfait Recipe

  1. In a blender, puree 3/4 c. strawberries and 3/4 c. raspberries with 1/2 tsp.
  2. sugar substitute.
  3. Coarsely chop remaining 1/4 c. strawberries and fold into the puree.
  4. In a large bowl, whisk 1 c. cream, remaining sugar substitute and vanilla till soft peaks form.
  5. Whisk in mousse mix; whisk till very stiff.
  6. Whisk in remaining 1/4 c. cream.
  7. In a parfait glass, place 1/4 c. of the berry mix.
  8. Top with 1/4 c. mousse mix; repeat layers twice.
  9. Top with a few reserved raspberries.
  10. Repeat procedure to make three more parfaits.
  11. This recipe yields 4 servings.
  12. Variation:o Chocolate mousse: Omit vanilla and add in 1 Tbsp.
  13. cocoa pwdr and sugar substitute to taste.
