Citrus Sole
- Cooking spray
- 2 tablespoons lemon juice
- 2 tablespoons lime juice
- 1 1/2 tablespoons all-fruit orange marmalade
- 4 mild fish fillets, such as sole (about 4 ounces each), rinsed and patted dry
- Preheat the oven to 375F.
- Lightly spray a 12 x 8 x 2-inch baking pan with cooking spray.
- In a small bowl, stir together the lemon and lime juices and orange marmalade.
- Using a basting brush, coat both sides of the fish with the mixture.
- Transfer the fish to the pan.
- Bake for 18 to 20 minutes, or until the fish flakes easily when tested with a fork.
