Frozen Pineapple Daiquiri Recipe
- 1 pound frozen pineapple chunks
- 2 cups ice
- 6 ounces light rum, such as Bacardi or Flor de Cana
- 4 ounces freshly squeezed lime juice (from about 8 medium limes)
- 3 ounces Simple Syrup
- 2 1/2 ounces dark rum, such as Myerss or Whalers, for serving (optional)
- Place all of the ingredients except the dark rum in a blender and blend on high until smooth.
- Divide the daiquiri among 5 glasses and top each with 1/2 ounce of the dark rum, if using.
- Serve immediately.
