Amish Molasses-Ginger Drops

  1. Heat oven to 375F.
  2. Combine sugar and 3/4 cup butter in large bowl.
  3. Beat at medium speed, scraping bowl often, until creamy.
  4. Add molasses, egg and lemon peel.
  5. Continue beating until well mixed.
  6. Add all remaining cookie ingredients; beat at low speed until well mixed.
  7. Drop dough by rounded tablespoonfuls, 2 inches apart, onto greased cookie sheets.
  8. Bake 10-12 minutes or until cookies are set.
  9. Cool 2 minutes on cookie sheet; remove to cooling rack.
  10. Cool completely.
  11. Combine powdered sugar, 1/4 cup butter and lemon juice in small bowl.
  12. Beat at low speed until smooth.
  13. (Add additional lemon juice, 1 teaspoon at a time, if frosting is too thick.)
  14. Spread frosting over cooled cookies.
  15. Sprinkle with chopped crystallized ginger.
