Hamburger Steaks with Lotus Root

  1. Chop the onion finely and microwave for 1 minute at 600 W in a heatproof container.
  2. Let it cool down completely.
  3. Peel the lotus root.
  4. Mince half and grate the rest.
  5. In a bowl, mix the ingredients and knead until sticky and well incorporated.
  6. Divide the meat mixture into 3 portions.
  7. Form each into a oval shaped patty, smacking down on them with your palms to eliminate air pockets.
  8. Heat a pan with the vegetable oil, then add the patties carefully.
  9. Make an indentation in the middle of each patty.
  10. Cook over medium-high heat for about a minute.
  11. When the patties are browned, flip over and wipe off the excess oil.
  12. Cover with a lid and steam-fry over low heat for 8 minutes.
  13. Transfer the hamburgers to serving plates.
  14. Wipe off the pan and add the ingredients.
  15. Bring to a boil over low heat.
  16. When the sauce is bubbling, add the katakuriko dissolved in water, mixing constantly.
  17. When the sauce is thickened, it's done.
  18. Pour the sauce over the hamburger steaks.
  19. Enjoy while piping hot.
