Mesquite Pork Chops with Roasted Vegetables
- 1-1/2 lb. sweet potatoes (about 3), peeled, coarsely chopped
- 1 large red onion, cut into thin wedges
- 1 Fuji apple, chopped
- 1 Tbsp. honey
- 1 Tbsp. chopped fresh thyme
- 1 Tbsp. olive oil
- 6 thin cut boneless pork chops (1-1/2 lb.)
- 1 pkg. (6 oz.) FRESH TAKE Smokey Mesquite BBQ Recipe Cheese Breadcrumb Mix, mixed together
- Heat oven to 375 degrees F.
- Combine first 6 ingredients, spread onto foil-covered rimmed baking sheet.
- Moisten chops with water; coat with cheese mixture as directed on package.
- Place over vegetable mixture.
- Bake 30 min.
- or until chops are done (145 degrees F).
- Remove from oven; let stand 3 min.
