Achiote Shrimp Skillet

  1. Mix annato paste and dressing.
  2. Reserve 2 Tbsp.
  3. ; pour remaining over shrimp in shallow glass dish.
  4. Turn to coat both sides of each shrimp.
  5. Refrigerate 30 min.
  6. to marinate.
  7. Heat large skillet on medium-high heat.
  8. Add reserved dressing mixture.
  9. Drain shrimp; discard marinade.
  10. Add shrimp to skillet; cook 1 min.
  11. Add remaining ingredients; cook 4 to 5 min.
  12. or until vegetables are crisp-tender and shrimp turn pink, stirring frequently.
