Beef Stew
- 2 lb. beef stew meat, cut into 1-inch cubes
- 2 Tbsp. cooking oil
- 3 c. water
- 1 large chopped onion
- 1 tsp. pepper
- 1 tsp. salt
- 1 1/2 tsp. garlic powder
- 1 tsp. dried oregano
- 1 tsp. basil
- 1 tsp. ground marjoram
- 3 bay leaves
- 1 (6 oz.) can tomato paste
- 3 c. peeled potatoes, cubed
- 2 c. sliced carrots
- 1 large green pepper, chopped
- 1 (10 oz.) frozen green beans
- 1 pkg. frozen peas
- 1 (10 oz.) pkg. frozen corn (whole kernel)
- 3 medium tomatoes, chopped
- Brown meat in cooking oil in a Dutch oven.
- Add water, onion, seasonings and tomato paste.
- Cover and simmer for 1/2 to 2 hours. Stir in potatoes, carrots and green pepper.
- Simmer 30 minutes. Add more water, if necessary.
- Stir in remaining ingredients, cover and simmer for 20 minutes more.
- Will serve 10 people.
