Lime Fool

  1. Sugar sticks: Thoroughly oil a sheetpan.
  2. In a small saucepan bring sugar, corn syrup and water to a boil.
  3. Cook until mixture reaches the hard crack stage (295 to 310 degrees F).
  4. Remove pan from heat.
  5. Being careful (caramelized sugar can cause a very bad burn) quickly spoon large swirls onto prepared sheetpan.
  6. Allow to cool completely.
  7. Release swirls from pan.
  8. Store in a cool dry place.
  9. In a small saucepan combine lime juice and peel, sugar and water.
  10. Bring to a boil and reduce to approximately 1 cup.
  11. Allow to cool, cover and refrigerate syrup overnight.
  12. Strain out peel and pulp of lime.
  13. Whip cream to stiff peaks with 1/4 cup syrup.
  14. Spoon into martini glasses.
  15. Serve garnished with sugar swirls and chocolate chips.
