Chipotle Cheddar Mashed Potatoes
- 2 lbs potatoes, quartered
- 4 garlic cloves, peeled
- 1 cup shredded white cheddar cheese
- 4 ounces cream cheese
- 14 cup butter
- 1 12 teaspoons chopped chipotle chiles in adobo
- salt
- Boil potatoes and garlic cloves in salted water until tender, about 15 - 20 minutes.
- Drain and mash.
- Add remaining ingredients and stir to blend.
- Should you like a thinner consistency, add milk.
