Pasta E Fagioli Soup
- 12-1 lb sweet Italian sausage
- 1 onion, diced
- 1 garlic clove, minced
- 2 cups water
- 2 cups chicken broth
- 2 (15 ounce) cans great northern beans, drained and rinsed
- 1 (15 ounce) can diced tomatoes
- 14 teaspoon pepper
- 1 cup elbow macaroni
- 1 cup fresh spinach
- 12 cup fresh parmesan cheese
- Cook sausage in a 6 quart pot or dutch oven.
- Add onion and cook on low until tender.
- Add remaining ingredients except the last three.
- Bring to a boil and add macaroni, spinach, and cheese then simmer until pasta is tender.
