Pan-Seared Duck with Blueberry Sauce
- 1 cup frozen blueberries Whole Foods 3 For $10.00 thru 02/09
- 1/3 cup apple jelly
- 1/4 cup port wine
- 3 Tbsp. Kraft Balsamic Vinaigrette Dressing
- 2 large duck breasts (1-1/4 lb./565 g)
- Cook first 4 ingredients in small saucepan on medium-high heat 13 to 15 min.
- or until thickened to syrup-like consistency, stirring frequently.
- Meanwhile, use sharp knife to make 1/4-inch-deep parallel cuts, about 3/4 inch apart, in top surface of each breast.
- Make additional scores at right angles to form diamond shapes.
- Heat large skillet on medium heat.
- Add duck, skin-sides down; cook 9 min.
- or until skin is crisp and golden brown.
- Turn over; cook 5 min.
- or until done (170F).
- Transfer duck to cutting board; let stand 5 min.
- Slice duck; serve with blueberry sauce.
