Spanish Chicken and Rice

  1. Brown onion in 1 tsp (5 ml) oil.
  2. Add garlic, then add chicken.
  3. Cook chicken for about 5 minutes turning over after about 2 minutes.
  4. Add water and rice.
  5. Add all seasonings
  6. Cook covered until rice is cooked.
  7. Lay roasted peppers on top and cover until they are hot.
  8. Serve with peas, if desired
