Orange Chicken
- 1 Chicken Breast
- 1 Shallot
- 3 clove Garlic
- 1/4 cup Red Bell Pepper or Roasted Red Pepper or and Sweet Peppers
- 2 Fresh Squeezed Orange (Juice)
- 1 cup Spinach
- 2 pinch Fresh Parsley
- Season chicken with salt and pepper.
- Add v.oil to saute pan and turn on medium heat.
- Saute the chicken for about 5 minutes.
- (Chicken should not be fully cooked).
- Remove and sit aside.
- Add shallots and red bell peppers to pan and saute for a minute.
- Deglaze the pan with fresh squeezed orange juice and reduce down for about 2-3 minutes
- At spinach and parley.
- Allow the spinach to shrink.
- Add salt and pepper to taste and serve immediately.
