Orange Chicken

  1. Season chicken with salt and pepper.
  2. Add v.oil to saute pan and turn on medium heat.
  3. Saute the chicken for about 5 minutes.
  4. (Chicken should not be fully cooked).
  5. Remove and sit aside.
  6. Add shallots and red bell peppers to pan and saute for a minute.
  7. Deglaze the pan with fresh squeezed orange juice and reduce down for about 2-3 minutes
  8. At spinach and parley.
  9. Allow the spinach to shrink.
  10. Add salt and pepper to taste and serve immediately.
