Red Lentil Coconut Curry Soup
- 1 (13 1/2 ounce) can coconut milk
- 1 onion, diced
- 1 bell pepper, sliced
- 1 bell pepper, sliced
- 1 lb lentils
- 32 ounces chicken broth
- 2 fresh cayenne peppers, sliced
- 2 tablespoons dried cilantro
- 2 teaspoons dried ginger
- 2 teaspoons kosher salt
- 8 cups water
- prepare vegetables.
- 2 place all ingredients in a pot and bring to a boil and simmer for 45 minutes.
