Two Meal Tacos and Stuffed Peppers for Two
- 1 pound Lean Ground Beef
- 1/4 cups Chopped Onion
- 1 teaspoon (scant) Cumin
- 1 teaspoon Fresh Chopped Cilantro (optional)
- 1 jar (15 Oz. Size) Salsa
- For Serving: Tortillas, Guacamole And Shredded Cheese
- 1 cup Cooked Rice
- 1/2 cups Shredded Cheese
- 2 whole Green Peppers
- Add beef to a warm skillet and begin to brown it.
- When the beef is about halfway done, toss in the onions and continue to cook until the beef is fully cooked.
- Stir in cumin, cilantro and salsa.
- Simmer for 15-20 minutes.
- Serve in tortillas with some guacamole and shredded cheese.
- If you have leftover meat, add 1 cup of cooked rice and 1/2 cup of shredded cheese to the mix.
- Warm it up in the microwave just until cheese is melted.
- Cut the tops off of two peppers, remove the seeds and stuff them with the meat mixture.
- Poke a few holes in the peppers, put them in a baking dish with about an inch of water on the bottom, cover tightly with foil and bake at 350 F for 30 minutes.
