Two Meal Tacos and Stuffed Peppers for Two

  1. Add beef to a warm skillet and begin to brown it.
  2. When the beef is about halfway done, toss in the onions and continue to cook until the beef is fully cooked.
  3. Stir in cumin, cilantro and salsa.
  4. Simmer for 15-20 minutes.
  5. Serve in tortillas with some guacamole and shredded cheese.
  6. If you have leftover meat, add 1 cup of cooked rice and 1/2 cup of shredded cheese to the mix.
  7. Warm it up in the microwave just until cheese is melted.
  8. Cut the tops off of two peppers, remove the seeds and stuff them with the meat mixture.
  9. Poke a few holes in the peppers, put them in a baking dish with about an inch of water on the bottom, cover tightly with foil and bake at 350 F for 30 minutes.
