Black Bean and Corn Salad
- 1 tablespoon extra virgin olive oil
- 2 tablespoons red wine vinegar
- 1 tablespoon Dijon mustard
- 1 teaspoon cumin
- 13 cup chopped fresh cilantro
- 1 (15 ounce) can black beans, drained and rinsed
- 1 (7 ounce) can white corn, drained
- 14 cup chopped sweet onion
- 2 plum tomatoes, seeded and chopped
- shredded monterey jack cheese, for topping (optional)
- Combine olive oil, vinegar, mustard, cumin and cilantro, set aside.
- Combine beans, corn, onion and tomato.
- Drizzle the dressing over the bean mixture.
- Stir together gently to avoid breaking the beans.
- May be topped with shredded cheese if desired.
