Chickpea and Onion Burgers

  1. Combine onion and vinaigrette in small bowl and set aside.
  2. In food processor, combine chickpeas, walnuts, wheat germ and parsley; cover and pulse til blended.
  3. Add eggs, curry, pepper; cover and process til smooth.
  4. Shape into 6 patties.
  5. Spray baking sheet with Pam.
  6. Bake at 375 for 10-15 minutes until firm.
  7. Combine mayo and mustard, spread over buns.
  8. Serve patties on buns, top with lettuce, basil and onion mixture.
