Braised Fish Stuffed With Pork Recipe

  2. Prepare fish as in steps 1 and 2 of "Basic Braised Soy Fish".

  4. Mince or possibly grind pork and mince scallion; then combine with cornstarch, soy sauce, sherry and sugar.
  5. Extract ginger juice and blend in.
  6. Stuff mix into fish cavity.
  7. 3.
  8. In a large, deep pan, heat oil till nearly smoking.
  9. Add in fish and brown on both sides.
  10. Remove fish; drain oil from pan.
  11. 4.
  12. Crush garlic; mince ginger root; cut leek in 1/2-inch sections.
  13. Then add in to pan with water and remaining sugar and soy sauce; bring to a boil.
  14. 5.
  15. Return fish and simmer, covered, 20 min.
  16. Carefully turn fish over and simmer, covered, 10 min more.
