Pumpkin Muffins with Apples & Walnuts
- 1-3/4 cups flour
- 3/4 cup sugar
- 2 tsp. pumpkin pie spice
- 1 tsp. CALUMET Baking Powder
- 1/2 tsp. baking soda
- 1/4 tsp. salt
- 2 eggs
- 1 cup canned pumpkin
- 1/2 cup MIRACLE WHIP Dressing Family Dollar $3.50 thru 02/07
- 1/3 cup oil
- 1 tsp. vanilla
- 1 Granny Smith apple, finely chopped
- 1/4 cup chopped PLANTERS Walnuts, toasted
- Heat oven to 375 degrees F.
- Combine first 6 ingredients in large bowl.
- Whisk eggs, pumpkin, dressing, oil and vanilla in medium bowl until blended.
- Add to flour mixture along with apples and nuts; stir just until moistened.
- (Batter will be lumpy.)
- Spoon into 12 paper-lined muffin cups.
- Bake 22 to 25 min.
- or until toothpick inserted in centers comes out clean.
- Cool in pan 5 min.
- Remove to wire rack; cool completely.
