Chive and Onion Mashed Carrots
- 2 lb. (900 g) carrots, peeled, thinly sliced
- 1-3/4 cups 25%-less-sodium chicken broth
- 1/2 cup Philadelphia Chive & Onion Cream Cheese Product
- Bring carrots and broth to boil in saucepan; cover.
- Simmer on medium-low heat 30 min.
- or until carrots are very tender and most the broth is cooked off, uncovering for the last 5 min.
- Remove from heat; mash until smooth.
- Add cream cheese product; mix well.
